The recipe calls for vegan mayonnaise, tofu, a couple tablespoons of relish, and Dijon mustard to mimic the flavor and texture of a classic egg salad. You’ll be convinced you’re eating the real thing.

Ingredients
  • 1 package extra firm tofu, such as house foods extra firm tofu
  • 2 whole celery stalks, minced
  • 1 tablespoon dijon mustard
  • 2 tablespoon relish (dill)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 2 tablespoon vegan mayonnaise
  • 1 pinch of turmeric
  • dash of salt and black pepper
  • 1 pinch of dill (optional for garnish)
Directions
  1. Mash tofu with fork or crumble into a large mixing bowl. Combine celery, Dijon mustard, relish, garlic powder, onion powder and vegan mayonnaise with tofu.
  2. Add remaining spices and mix well. Chill in refrigerator for 30 minutes before serving.
