Ingredients
- 1 large english cucumber
- 1 small green apple
- 1 cup evolution fresh sweet greens and ginger
- 2 tablespoon extra-virgin olive oil, plus more serving
- 2 tablespoon sherry vinegar
- 3 small yellow tomatoes
- 2 garlic cloves
- 1/4 cup blanched almonds or pine nuts
- sea salt, to taste
- freshly groud pepper, to taste
- 1/2 teaspoon grated fresh ginger
Directions
- Blend all ingredients together. Season liberally with salt and pepper.
- Serve with a drizzle of olive oil.
