Cook your rice in Coca-Cola for a sweet side dish that combines perfectly with spicy chicken or topped with fresh coconut shavings.

Ingredients
- 1 cup white or yellow rice
- 1 cup coca-cola
- 1 cup water
- 1/4 cup chicken stock
- 2 tablespoon butter
- salt and pepper, to taste
- scallions, chopped, for garnish (optional)
Directions
- Add all of the ingredients to a medium pan. Bring to a boil over medium-high heat. Stir once, cover, and reduce to heat to low. Simmer the rice for 20 minutes. Remove from the stove, and fluff with a fork.
