Coca-Cola® & Potato Chips Cupcakes From Four Rivers Barbecue

Ingredients
- 2 cup all-purpose flour
- 1 cup granulated sugar
- 1 cup salted butter
- 3 tablespoon cocoa powder
- 1 cup coca-cola®
- 1/2 cup buttermilk
- 2 eggs
- 1 teaspoon baking soda
- 1 teaspoon pure vanilla extract
- 1 1/2 cup mini marshmellows
- 1 2/3 cup broken ridge potato chips
- 9 whole ridged potato chips
- 1/4 cup chocolate almond bar
- 1/2 pound salted butter
- 4 ounce cream cheese
- 2 cup powdered sugar
- 3 tablespoon coca-cola®
- 1 cup coca-cola® (to brush on)
Directions
- Sift flour and sugar together and set aside. Melt butter, cocoa powder and Coca-Cola® until it boils.
- Pour over sugar mixture and mix until combined.
- Add buttermilk, eggs, soda, vanilla and marshmallows.
- Scoop into cupcake wrappers and top with 3 tablespoons of broken potato chips for each cupcake.
- Bake at 350 degrees for 28 minutes.
- Combine and beat all ingredients until smooth.
- Top each cupcake with one chocolate-covered potato chips.
- Brush on 1 cup of Coca-Cola® while still warm.
