Chicken Tostada With Mango-Melon Slaw

Ingredients
- 2 tostada shells
- 1 cup shredded chicken, such as hormel taco meat’s seasoned and shredded chicken, heated
- ¼ cup shredded purple cabbage
- ¼ cup thinly sliced red bell pepper
- ¼ cup watermelon, cut into 2-inch sticks
- juice from ½ lime (about 2 tablespoons)
- 2 tablespoon chopped, fresh cilantro leaves
- 1 tablespoon olive oil
- 2 tablespoon queso blanco crumbles
Directions
- Place ½ cup of the chicken on each tostada shell.
- In a medium bowl combine cabbage, red bell pepper, mango, watermelon, lime juice, cilantro, and olive oil, tossing to coat.
- Place cabbage mixture over chicken and sprinkle with queso blanco crumbles.
