Campfire Pancakes
Prepare your dry pancake ingredients in advance in a jar, pour in the wet ones, shake it up, and cook in a skillet over the campfire.This recipe is courtesy of The Londoner.

Ingredients
- 1 cup self-rising flour
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1 egg
- 1 tablespoon butter, melted over the campfire, plus more for the pan
- 1 cup milk
Directions
- Fill a sealable jar with the flour, salt, baking, powder, and cinnamon.
- Heat a cast iron skillet over the campfire.
- Crack the egg into the jar, and pour in the butter and milk. Seal the jar and shake it vigorously until you have a thick, smooth batter.
- Add some butter to the skillet. Pour in the pancake batter and cook for a couple of minutes on each side, until golden and cooked through. Repeat with the remaining batter. Top with maple syrup, bacon, or fruit, and serve immediately.
