This sandwich came about on one of those nights where I came home to almost no food in the fridge, unsure of what I was going to do for dinner. After a little scrounging around, and a lot of "What the hell could I possibly do with this?," it hit me. Bread, avocado, egg, and a block of Parmesan? Perfect. Avocado and Egg Sandwich
Ingredients
  • 2 slices whole-grain bread
  • 1 haas avocado
  • 2 eggs, fried
  • freshly grated parmesan
  • black pepper, to taste
Directions
  1. Put the bread in the toaster. When it's nice and brown, spread a thick layer of avocado on each side. (You'll probably have some leftover, so you can just snack on that when you're done.) Top with the eggs and cheese, and season with pepper, to taste.
