 I once proclaimed that a combination of any bread, any cheese, and any preserves yields an eye-opening twist on the classic grilled cheese. With the myriad of leftover soft cheese this holiday season, there should be no shortage of ingredients to make these lip-smacking treats.

Apricot and Brie Grilled Sandwich
Ingredients
  • butter, softened
  • 2 slices challah or other egg bread
  • 3 thick slices brie cheese
  • 1 tablespoon pine nuts
  • 2 tablespoon apricot preserves
Directions
  1. Feel free to try any bread, cheese, or jelly in any combination, not just the ones listed here.
  2. Lightly spread the 2 pieces of bread with butter. Place 1 piece, butter side down, in a non-stick skillet over low heat and top with the slices of Brie. Carefully distribute the pine nuts on the Brie. Spread the unbuttered side of the other piece of bread with some apricot preserves and put it jelly side down on top of the cheese. When the first side is browned, after about 3 minutes, flip the sandwich and cook until the other side has browned, about another 3 minutes. Serve while warm.
