No-Cook Dishes For Hot Summer Nights
When the temperature gets above 90 degrees and your AC is wheezing, you want something that you not only don't have to cook but is also light and refreshing. On summer days, many people find themselves eating a collection of small meals throughout the day, so an easy cheese dip with crackers and crudités works well. We've also got an icebox cake to cool you off and a marinated tofu satay with a spicy peanut sauce to enliven the taste buds.
When creating no-cook meals this summer, take advantage of the fresh vegetables that are in season; marinating them or making a zesty dressing adds extra flavor but keeps the meal fuss (and heat) free. Look to proteins that are just as great eaten raw, like high-grade fish served crudo or nuts like almonds for delectable dessert bars.
