Mashed Pumpkin With Pumpkin Seeds

Ingredients
- 1 tablespoon olive oil
- 1 chopped onion
- 2 chopped cloves of garlic
- 1 pumpkin, peeled and cut into 1-inch cubes
- 1/4 teaspoon cumin powder
- 1/4 cup water
- salt, to taste
- roasted, shelled pumpkin seeds
Directions
- Heat oil in sauté pan and fry onions until translucent. Add garlic and fry until golden brown. Add pumpkin cubes and cumin and sauté for a minute or two.
- Add 1/4 cup of water. Cover and cook at low heat until tender.
- Remove from heat and mash with fork or potato masher.
- Top with roasted pumpkin seeds.
