Italian Sausage With Balsamic Tomatoes, Arugula, Tomatillos, And Feta
SWAT team hot dogs had me thinking of my favorite summer grilling and baseball game fare — Italian sausage. I decided to take this favorite and put a little twist on it by adding some of my favorite ingredients. I filled the toasted buns with balsamic sautéed tomatoes, lightly heated arugula, chopped tomatillos, and feta, and topped all of this with sweet Italian sausage. The product was a fresher-tasting (without compromising on the sausage) sausage, complete with bun, toppings, and a little bit of kick. My tip: add hot sauce to enhance the flavor and provide some extra spice.

Ingredients
- 2 teaspoon olive oil
- 4 sweet italian sausages
- 1 teaspoon balsamic vinegar
- 2 tomatoes, sliced
- 1 cup packed arugula
- 4 hot dog buns, toasted
- 2 tomatillos, chopped
- 1/4 cup feta crumbles
Directions
- In a frying pan, heat 1 teaspoon of the olive oil over medium-high heat. Add the Italian sausage and cook for 10-12 minutes.
- In another frying pan, heat the remaining olive oil and balsamic vinegar over medium-low heat, and place the tomato slices evenly throughout the pan. Cook for about 2 minutes , and then turn over. Cook for 1 more minute, and then add the arugula. Cook for 2 more minutes, then turn off the heat and set aside.
- Lay out the toasted hot dog buns and top with desired amount of tomatoes and arugula (I do 2-3 tomatoes per bun). Next, add the tomatillos and feta. Then add the sausage, serve, and enjoy!
