How To Cook A Yummy Jamaican Pork Roast

Pork is one of the most popular meats throughout the Western world. Pork is enjoyed equally in the Caribbean and in the Central and South American countries. Pork is known to be the most delicious and enjoyed meat in the West.

Here are the ingredients that you are going to need.

Three pounds of pork shoulder. Always remember to have it deboned.

Five fairly large garlic cloves, of which 2 are finely chopped and 3 are slivered

Two tablespoons of vegetable oil

Four seeded and finely chopped habanero chilies

One coarsely chopped green bell pepper

One teaspoon of dried oregano

One teaspoon of ground cumin

One teaspoon of ground pepper

Half a teaspoon of ground cinnamon

One bay leaf

Half a cup of limejuice, preferably fresh

Two cups of canned tomato cooking puree

Follow the given directions for cooking the pork roast.

With the help of a sharp sparing knife, make small slits on the surface of the pork shoulder. Stuff the slits with your garlic slivers, roll the pork and then tie it up with a kitchen twine. Heat the vegetable oil in a large skillet at medium heat. Add the chilies, chopped garlic, green bell pepper, oregano, onion, cumin, cinnamon and bay leaf, until all these vegetables are soft enough. Also, keep stirring them frequently. Remove the skillet from the cooking burner and start stirring in the limejuice.

Now place your pork in a fairly large bowl and add the marinade to it. Turn the pork shoulder enough number of times, so that the marinade covers the entire surface. After marinating the meat properly, cover it with a plastic wrap and keep it in the refrigerator for at least four hours. Also, don't forget to turn the pork occasionally in the refrigerator.

Now preheat your oven to 350 degree Fahrenheit. Before you put the pork inside the oven, remove as much marinade from it as you can and put it in a saucepan.

Put the pork in a roasting pan and roast it till the temperature inside the pork reaches 165 degrees Fahrenheit. This will take at least one hour and forty-five minutes.

When the roast been cooked, add the tomato puree to your marinade and heat it till it is close to the boiling point. At that moment, decrease the heat level to low and keep on simmer for five minutes. Remove the bay leaf now and add some of the sauce from the roast if you want to. Now transfer your cooked pork roast to the serving plate and keep it that way for 10 minutes. Now slice the pork and add the sauce over it with the help of a spoon.
