As the elegant pamphlet sent out at the beginning of the meal noted, elBulli was a romantic restaurant. 

"Set overlooking the Cala Montjoi bay in Spain's Costa Brava, the dining experience often began with cocktails and snacks on the patio at sunset. A seemingly endless steram of gracious servers would bring mind bending drinks and small bites of wonder. Time slowed."

True, some elBulli cocktails and bites were on the offer at The Aviary next door, but the team at Next offered that it would be impossible to recreate a full sense of time and place at the homage. Still, a rose dangled in the light above the table, a slowly twirling reminder of Ferran Adrià's original in Roses, Spain.
