Egg White Frittata With Goat Cheese And Spinach

Ingredients
- 1 tablespoon unsalted butter
- 2 cloves garlic, minced
- 1/3 cup cooked spinach, drained and chopped
- 4 scallions, white parts only, chopped
- 1/4 cup fresh goat cheese
- 8 egg whites
- salt and pepper, to taste
- 1/4 parsley, chopped
Directions
- Preheat the oven to 425 degrees.
- Heat ½ tablespoon of the butter in a medium-sized ovensafe frying pan. Add the garlic and sauté until golden brown. Transfer to a large mixing bowl.
- Add the spinach, scallions, and goat cheese and stir to combine. Add the egg whites, salt, and pepper, and mix until everything is evenly distributed.
- Melt the remaining butter in the pan over medium heat, and add the mixture. Let sit for 2-3 minutes until the bottom sets, then place the pan in the oven. Bake until the frittata is cooked through, for about 10 minutes.
- Remove the pan from the oven, and use a spatula to release the frittata from the pan. Slide it off the pan and onto a platter, slice into quarters, sprinkle the parsley on top, and serve.
