Ever noticed how cooking a full egg breakfast produces more dirty dishes than cooking lunch and dinner combined? We certainly have, so we have devised a way to make that egg breakfast with only a single coffee cup to wash when all that's left are crumbs.

This Microwave Coffee Cup Scramble is soon to become your new favorite rushed weekday breakfast or lazy Sunday brunch recipe. Add toppings to your scramble like shredded cheese, chopped tomatoes, or ham, or make coffee cup version of huevos rancheros with the addition of salsa, chopped cilantro, and jalapeños.
To make this simple scramble, generously spray a 12-ounce microwave-safe coffee mug with non-stick cooking spray, add two eggs and two tablespoons of milk, and then beat the eggs with a fork. Microwave the eggs on high for 45 seconds, then stir. Microwave the eggs again for another 30 to 45 seconds or until set. Then top with cheese or other toppings, seasons with salt and pepper and serve.
Now you never need to wash another egg skillet again.
