It's that time of year again when we start talking turkey. As we dream of the food coma to come, we salivate over all of the side dishes that go along with the traditional bird: mashed potatoes, sweet potatoes, stuffing... But ask around, and you'll find that Thanksgiving side dishes and traditions actually vary around the country.

In the South, you can find gumbo with oysters, collard greens, candied yams, and cornbread "dressing." (The difference between a dressing and a stuffing is that a dressing is not put inside of the turkey when it's cooking.)
Go to the Midwest, though, and you'll come across wild rice stuffing, a tribute to the rice harvested in Minnesota and Wisconsin, and twists on traditional dishes using apples and tart cherries, which are both regionally grown.
The Northeast's Pennsylvania Dutch Country is known for a dried corn that is reconstituted and added to cream, and those of French-Canadian heritage in Maine may make a pie of ground pork that's served on toast or crackers.
