Barbecue Pork Rib Stack
Unlike the housemade, signature Cherry Coke Barbecue Sauce at the popular Southern restaurant chain CinéBistro, this recipe is based off a bottled barbecue sauce, which makes it very easy to make at home. Always use a high-quality bottled sauce.

- 1/3 cup dried cherries
- 1/2 cup cola, or cherry cola
- 2 tablespoon lime juice
- 3 1/2 tablespoon chipotle in adobo
- 1 teaspoon liquid smoke
- 2 cup bottled barbecue sauce, your favorite or a very high-quality brand
- 2 racks st. louis-style spareribs
- 2 cup "smoke dunk," which is 1/2 water and 1/2 liquid smoke
- 1 1/2 tablespoon kosher salt
- 1 tablespoon black pepper
Directions
- Add the cherries, coke, juices, and chipotle to a pot. Reduce the liquid by 2/3. Add the liquid smoke and the prepared barbecue sauce. Blend the mixture with an immersion blend or transfer to a food processor to blend. Simmer for 20 minutes after blended.
- Dip the pork racks into the liquid smoke mixture. Combine salt and pepper and sprinkle evenly over the ribs. Place the racks on a sheet pan without overlapping, and wrap tightly in foil. Refrigerate overnight to marinate.
- The following day, remove from the refrigerator an hour before cooking and bring to room temperature.
- Preheat the oven to 300 degrees.
- Cook for about 1 hour and 45 minutes (inside the foil.) Test by lifting a rib from the center of the rack. It should pull apart easily.
- Finish cooking on the grill, or under the broiler, basting the racks with the cherry cola barbecue sauce.
