Avocado With Sweet Potato And Charred Onion Dip Recipe

- 4 ripe avocados - diced
- 1 sweet potato - baked
- 1 red onion - charred
- 2 tablespoon lime juice
- 2 ounce sour cream
- 2 ounce olive oil
- 1 teaspoon sea salt
- 1 pinch nutmeg
Directions
- Preheat oven to 375º
- Place whole sweet potato into oven baking for 35-40 minutes until fork tender.
- Put broiler setting on low. Slice onion into 1/4 inch thick slices. Place onto sheet pan and broil for 10-12 minutes. Onion is ready when tops are slightly charred. Once onion is cool rough chop and set aside.
- In a bowl place diced avocado, lime juice, diced cold sweet potato (1/2 inch cubes) and charred onion slices. Drizzle with olive oil and mix all ingredients together.
- Season with sea salt and a pinch of nutmeg.
- Garnish with dollop of sour cream and diced red onion.
- Serve with dried fruit (pineapple), plantain chips and/or pita points.
